I found the perfect fall breakfast, ya’ll. It is easy and healthy too! I adapted this from Tone It Up’s nutrition plan and it is a winner in my household.
Pumpkin Protein French Toast
2 slices of Ezekiel Bread (or Dave’s Killer Bread)
1/4 C. Egg Whites
A heaping tablespoon of Pumpkin Puree
1/2 tsp Pumpkin Pie Spice (I usually just eyeball it and put a few shakes into the mixture)
A serving of protein powder – I use two scoops of Nature’s Bounty Vanilla Protein
I whisk up the egg whites, pumpkin puree, pumpkin pie spice and protein while I have a skillet heating up on the stove. I spray a little bit of cooking spray in it so it is easier to flip the toast. I dip the slices of bread into the mixture and make sure it is all coated then put it in the skillet to cook. I usually have the burner on medium so it takes about 5 minutes or so on each side. It is done when both sides are golden brown.
I top with a drizzle of maple syrup and some pecans. Enjoy with a hot cup of coffee!
